By default the POS shows all of the matrix variations and it does not depend on the stock levels.
The Brazil POS has a setting when it is enabled the POS shows only those matrix products and variations, which are currently “in stock” (that means that the product quantity is higher than the 0) and only these can be sold.
Setting can be enabled in the POS Settings -> Configuration -> Sale -> Sell only matrix products that are in stock.
